Recipe Ingredients for Whole Grain Fig Muffins

2 cup Flour
2 1/2 tsp Baking Powder
1 packet SPLENDA No Calorie
1 cup Milk, Nonfat, Fluid
1/4 cup Applesauce
2 large Egg, White
1 tbsp Lemon Peel
1/4 cup pieces or chips Walnuts, English
15 small (1-1/2" dia) Figs
1 tsp Cinnamon, Ground

Recipe Directions for Whole Grain Fig Muffins

  1. preheat oven to 375F.

  2. combine dry ingredients in large bowl: flour, baking powder, splenda, cinnamon, grated lemon zest.

  3. combine wet ingredients in small bowl: milk, applesauce.

  4. beat egg whites. fold egg whites into wet mixture.

  5. add chopped figs to dry mixture, mix to coat. repeat with chopped walnuts. save some walnuts for topping.

  6. add wet mixture to dry mixture. fold just to combine (about 12 strokes).

  7. scoop batter into greased muffin tins.

  8. bake for about 20 minutes, until toothpick comes out clean.
