Recipe Ingredients for Whole Grain Cranberry Oat Muffins

1 cup (130 grams) whole spelt, whole wheat pastry, or whole wheat flour
2 tablespoons wheat germ
2 tablespoons wheat bran
1 1/2 teaspoons baking soda
1 1/2 cups (120 grams) oats
1 cup (120 grams) dried cranberries
2 T orange zest
1 cup (240ml) orange juice
1/4 cup (60ml) olive oil - I used extra-virgin
1/4 cup (80 grams) honey
1 teaspoon vanilla extract
1 egg, room temperature
1/2 cup boiling water

Recipe Directions for Whole Grain Cranberry Oat Muffins

  1. Combine dry ingredients, including the zest.

  2. Add the wet ingredients, stirring in the boiling water last.

  3. Preheat the oven to 375F / 190C.

  4. After mixing everything together, the batter needs to sit 15 minutes in the bowl, so if your oven only takes 5 minutes to preheat, let your batter sit 10 minutes first.

  5. Fill your muffin liners. In my pan, I have to fill them all the way to the top.

  6. Sprinkle with coarse sugar, if using.

  7. Bake for about 16 - 18 minutes or until a toothpick inserted in the middle comes out clean.

  8. Remove muffins from pan and cool on a wire rack.

  9. Yield: 12 standard muffins.
