Recipe Ingredients for Whole Grain Cinnamon Raisin Swirl Bread

1/2 cup Vanilla Almond Breeze
1 tbs Honey
1/4 oz. Rapid Rise Yeast
1 cup Water
4 cups White Whole Wheat Flour
1 1/2 tsp Sea Salt
2 tsp cinnamon
1 cup Raisins
1 tbs Honey
4 tbs Light Brown Sugar
1/8 tsp Ground Nutmeg
1/8 tsp Ground Ginger
4 tsp Cinnamon

Recipe Directions for Whole Grain Cinnamon Raisin Swirl Bread

  1. Stir together first five ingredients in a small bowl until honey is dissolved and let sit until yeast is foamy. or "proofed."

  2. Meanwhile, combine the next three ingredients in a large bowl.

  3. Form a well in the center of the dry ingredients, and pour the yeast mixture in the center.

  4. Combine the mixtures together until a firm dough is formed.

  5. Begin to knead until there no longer any dry bits.

  6. Let rest for 5 minutes.

  7. Begin to knead once again until smooth and elastic, and not sticky.

  8. Form into a ball and allow to rise for 1 hour in a warm place.

  9. Place raisins in a bowl and cover with boiling hot water. Let sit until plump and pat dry.

  10. When dough is done rising it will dent rather than spring back when poked.

  11. Invert the dough onto a lightly floured surface and roll out to 12x15in.

  12. Press the raisins into the dough.

  13. Fold the dough into thirds lengthwise.

  14. Using a rolling pin roll into a rectangle, about 1/2 in. thick and 5 in. wide.

  15. Sprinkle remaining sugar and spices in an even layer.

  16. Roll from short side into a log.

  17. Place dough seam side down into lightly oiled loaf pan.

  18. Let rise for 30-60 minutes.

  19. Bake at 425 degrees F until golden brown, about 20-25 minutes.
