Recipe Ingredients for Whole Grain Carrot Muffins

1.5 cup Flour
1 cup dry Old Fashioned Quaker Oats
3 tsp Baking Powder
0.5 tsp Cinnamon, Ground
1 cup Milk, Nonfat, Fluid
1 large Egg, Whole
0.25 cup Applesauce
1 cup, grated Carrots
0.5 cup, slivered Almonds
0.5 cup Orange Juice

Recipe Directions for Whole Grain Carrot Muffins

  1. Preheat oven to 375F.

  2. Line muffin tins with muffin liners.

  3. Optional: toast nuts for 5-7 minutes, allow to cool before chopping.

  4. Combine the flour, oats, and baking powder in a large bowl.

  5. Combine the egg, milk, applesauce in another bowl. Whisk until blended.

  6. Stir the grated carrots into the dry ingredients until they are well separated and coated with flour. Repeat with the nuts.

  7. Add the wet ingredients to the dry ingredients all at once. Stir until just combined.

  8. Scoop 1/4 cup of the batter into each muffin liner.

  9. Bake 18-20 minutes, or until the tops are golden brown and a toothpick comes out clean.

  10. Remove from the oven and let cool in the muffin tin for 10 minutes.
