Recipe Ingredients for Whole grain Blueberry Muffins

1 1/2 cups bran
1 cup whole wheat flour
2 T cinnamon
1 1/4 T flaxseed
1 1/4 t baking soda
1 t cinnamon
1/8 t salt
3/4 cups non fat milk
1/3 cup honey
2 ripe banana
1 egg
2 T olive oil
1 t vanilla
1/2 cup blueberries

Recipe Directions for Whole grain Blueberry Muffins

  1. Preheat ovento 400 degrees F.

  2. Lightly coat 2 non stick miniature muffin pans with olive oil cooking spray

  3. In a medium bowl, combine the bran, flour, flaxseed, baking soda, cinnamon, and salt. Set aside.

  4. In another medium bowl or a blender, combine the milk, honey, banana, egg, olive oil, and vanilla extract until smooth.

  5. Make a well in the center of the dry ingredients and pour in one third of the liquid mixture. Using a spoon, stir until smooth.

  6. Add the remaining liquid mixture and stir just until combined.

  7. Add the blueberries and stir again, but don't overmix.

  8. Spoon 2 T of batter into each prepared muffin cup.

  9. Bake for about 8 minutes, or until the tops spring back when pressed gently in the centers. Don't overbake.

  10. Cool completely on the rack.
