Makes 12 muffins. Quick oats can be used instead of the "old fashioned". Nuts are optional.

Recipe Ingredients for Whole Grain Banana Muffins

1 1/2 cups all purpose flour
1 cup oatmeal, uncooked, old fashioned
1/2 cup brown sugar, packed
1/4 cup walnuts, chopped
1 tablespoon baking powder
1/2 teaspoon baking soda
3 medium bananas, mashed
4 tablespoons margarine, cholesteral free, melted
1/2 cup milk, fat free
1 egg, lightly beaten

Recipe Directions for Whole Grain Banana Muffins

  1. Heat oven to 400F. Line 12 muffin cups with paper baking cups.

  2. In large bowl combine flour, oats, sugar, nuts (optional), baking powder and baking soda. Mix well once. In separate bowl combine bananas, milk, margarine, egg and blend well. Add to dry ingredients all at once and stir just until dry ingredients are moistened.

  3. Fill muffin cups. Bake 17 to 19 minutes or until golden brown. Cool in the pan on a wire rack for 5 minutes. Serve warm.
