A version of Alton Brown's recipe from the show Good Eats. A higher fiber alternative and you won't miss the fat from whole milk one bit. I can't compromise on the butter though.

Recipe Ingredients for Whole Grain Baked Macaroni & Cheese

12 oz Barilla Plus Elbow Macaroni
1/2 cup minced yellow onion
3 cups skim milk
12 oz shredded sharp cheddar cheese
1 tbsp dry mustard
3 tbsp flour
3 tbsp butter
1 large egg
2 tsp kosher salt
1 tsp black pepper
1 tsp paprika

Recipe Directions for Whole Grain Baked Macaroni & Cheese

  1. Preheat oven to 350.

  2. While the pasta is cooking (follow box instructions) melt the butter in a large sauce pan on medium heat. Add the flour, mustard and paprika and slowly add the milk, stir out any lumps. Add the onions, salt, pepper and bay leaf and simmer for about 10 minutes, stirring often.

  3. Drain pasta and set aside.

  4. Remove milk and flour mixture from the heat and stir in 3/4 of the cheese until the mixture is creamy. Add the pasta to the cheese mixture and pour the whole thing into a 2 quart casserole. A more shallow casserole will result in more crunchy surface. So if you like crunch use a shallower pan and if you don't use something deeper.

  5. Top with the remaining cheddar cheese.

  6. You could also shave some aged parmesan for a deeper salty flavor.

  7. Bake for 30 minutes. Let it sit for about 10 minutes before serving.
