Recipe Ingredients for Whiting with asparagus and quinoa

400 g whiting
1 cup quinoa
15 ml lemon juice
5 g tarragon
12 asparagus spears
1 salt and pepper, to taste

Recipe Directions for Whiting with asparagus and quinoa

  1. Cook quinoa according to package directions

  2. Separate whiting fillets into thin lengths

  3. Roll fish around spears and place on top of quinoa in an oven-proof dish

  4. Scatter lemon juice, tarragon, salt and pepper over fish

  5. Bake at 400 degrees F for about 15 mins or until fish flaked easily with a fork
