White whole wheat and Better for Bread Flour

Recipe Ingredients for White Whole Wheat Bread #1

8 ounce white whole wheat flour
17 ounce unbleached bread flour
1 ounce olive oil
4 tsp yeast
1 tbsp organic sugar
12 g kosher salt
16 ounce water

Recipe Directions for White Whole Wheat Bread #1

  1. Sponge: White whole wheat flour and 1 tsp yeast in bowl, whisk to combine, add water and stir just till combined. Allow to sit in moderately warm (75 - 100 degrees F) for 4 ~ 8 hours. Bowl must have room for yeast to grow!

  2. After sponge has 'perked' use spatula to move goo to uncover water. add sugar to water. recover water with goo and sprinkle/ spread remaining yeast (1 Tbsp = 3 tsp)over top of goo. While yeast is hydrating measure 15 of the 17 ounces of bread flour, add kosher salt and whisk to combine.

  3. Fold sponge goo, yeast, sugar and water together. Place in mixing bowl, add oil and combine. Add salt / flour mix, stir, work, knead to combine. Check moisture, if too wet add parts of remaining flour to bring dough to proper 'wetness'. I like a slightly wet dough.

  4. Allow dough to rest (autolyse) 15 ~ 20 minutes then knead to completion. Form a ball.

  5. Allow to rise in lightly oiled, covered bowl (standard thing, oil bowl, drop ball upside down into bowl, rotate dough to oil top, then rotate ball to right side up)

  6. Punch down dough, remove from bowl, split into equal parts, knead into balls, allow to rest 10 minutes.

  7. Form dough to fit pan, one ball works in standard bread pan. Grease pan and place dough. I sprinkle wheat flour over top to keep wax paper cover used during raise from sticking.

  8. Bake in 425 degree oven till internal temp is 195 to 205. Crust should be lightly browned.
