Lasagna with a lowfat white sauce and lots of veggies.

Recipe Ingredients for White veggie lasagna

6 oz lasagna noodles, whole wheat
6 oz part skim ricotta
1 egg
1 cup broccoli, chopped
1 cup spinach, chopped
1 cup zuchini, chopped
1/2 cup onion, chopped
4 oz mushrooms, chopped
1/2 cup edamame
1 garlic clove
1 tbs olive oil
6 oz yogurt, greek, plain
1/2 cup skim milk
8 oz part skim mozzarella cheese
3 tbs parmesian cheese

Recipe Directions for White veggie lasagna

  1. Saute onion, garlic and zuchini in a large pan with the 1 tbs olive oil.

  2. When soft, add 2 tbs water and the rest of the vegetables to the pan.

  3. Cover and steam until all veggies are soft.

  4. Mix ricotta with egg and 1 tbs of the parmesian. Add salt/pepper to taste.

  5. Mix yogurt with milk and add 1 tbs parmesian.

  6. In an 8 inch square pyrex dish, assemble the lasagna, layering the noodles with ricotta mixture, veggie mixture, yogurt mixture and 1/3 of the mozzarella cheese.

  7. Should make three layers in an 8 inch pan. Sprinkle the remaining tbs of parmesian on the top.

  8. A serving is 2" x 2". Plan on having 2 servings.
