Supposedly adapted to make a white cupcake, but the result was more like a sponge cake than a cupcake.

Recipe Ingredients for White Sponge-ish Cake

1 cup all purpose flour
7/8 tsp baking powder
1/8 tsp salt
1/4 cup unsalted butter
2/3 cup sugar
1 large egg
1/3 cup low fat 1 % milk
1/2 tsp vanilla extract

Recipe Directions for White Sponge-ish Cake

  1. Preheat oven to 350 deg F.

  2. Sift flour, salt and baking powder together.

  3. Soften butter in microwave.

  4. Beat butter until creamy.

  5. Slowly add sugar to butter while beating.

  6. Add egg and beat.

  7. Combine vanilla and milk.

  8. Slowly mix in 1/4 of dry ingredients. Slowly mix in 1/4 of wet ingredients. Repeat until all are combined in a smooth mixture.

  9. Pan the batter and bake for 20-30 min until cake bounces back after being pressed.

  10. Let cool for 20 min.
