Recipe Ingredients for White Soy Bean Chicken Chile

30 oz soy beans
30 oz diced tomatoes
2 tsp olive oil
1 red onion
21 oz chicken breasts
1/2 tsp Tabasco sauce
1/4 tsp white pepper
3/4 tsp chili powder
1/4 tsp sea salt
1/2 tsp coriander
1/2 tsp cumin
1/4 tsp bay leaf, finely ground
2 cups water
8 oz corn
1/3 cup sour cream, light

Recipe Directions for White Soy Bean Chicken Chile

  1. Cut up 3 chicken breasts (about 21 oz into cubes and cook in 4 qt pan, but don't brown in olive oil.

  2. Chop up onion and add to chicken and cook until onion is clear

  3. Dice and seed tomatoes and add to chicken with the water and seasonings.

  4. Simmer on low for about 20 minutes add more water if needed.

  5. Add canned soy beans and simmer for 20-25 minutes.

  6. Add corn and simmer for 5-10 minutes.

  7. Serve with a tsp of light sour cream in the center and tortilla chips on the side.
