7 ounce orange roughy
4 ounce whole milk
1 ounce butter
1/2 tbsp cornstarch
1/16 tsp salt
1/16 tsp pepper

Recipe Directions for White Roughy Filets Simmered In Milk

  1. melt butter in pan just large enough for filets

  2. add milk, bring to simmer

  3. add filets, simmer 10 min

  4. remove filets

  5. whisk cornstarch into milk, simmer 3 min to thicken

  6. replace filets in sauce to warm

  7. lightly salt and pepper if needed

  8. note:

  9. 7 ounces is about two fillets

  10. any white fish with a mild taste can be used

  11. skim milk can be substituted, but may curdle, requiring more cornstarch
