Recipe Ingredients for White Rib Omelette

4 oz Beef, Rib, Small End (Ribs 10-12)
3 large Egg, White
0.1 serving Milk
0.3 tsp Oregano, Ground
0.25 Teaspoon Thyme
2 dash Pepper, Black
0.25 Teaspoon Basil
1 cup Spinach
1 serving 2% Milk Reduced Fat Mild Cheddar
2 mushroom Mushrooms
0.3 cup Onions
3 tbsp chopped Shallots

Recipe Directions for White Rib Omelette

  1. Sautee onions, shallots, mushrooms and rib meat until meat is hot.

  2. Keep sauteed meat and veggies warm over low heat.

  3. In a bowl, combine egg whites, milk and herbs, mix well.

  4. Coat a non-stick skillet with cooking spray.

  5. Heat skillet to medium low heat.

  6. Add chopped spinach.

  7. As it wilts, pour egg white mixture over spinach and allow to set around edges.

  8. As edges set, lift them gently with a spatula and tip the skillet to allow remaining liquid underneath.

  9. When the egg whites are set, sprinkle the cheese on top, then dump the sauteed meat and veggies on top.

  10. Fold omelette in half.

  11. Serve immediately.
