Recipe Ingredients for White quinoa pilaf with caribbean flavors

1 cup Quinoa
2 cups water
1 cup frozen edamame (thawed)
1/2 cup dry apricots
1 red bell pepper, chopped
1 serrano pepper, chopped
6 Onions, Spring Or Scallions
1/4 cup sliced almonds
1/4 cup dried cranberries
1/4 cup grated unsweetened coconut
3 tablespoons chopped cilantro
1/2 cup lime juice
2 tablespoons balsamic vinegar

Recipe Directions for White quinoa pilaf with caribbean flavors

  1. toast quinoa in a dry skillet until an aroma is given off and the grains turn golden.

  2. Add the water or broth

  3. Simmer until the grains have absorbed most of the liquid.

  4. Add the dry ingredients, followed by the thawed and fresh ingredients.
