Makes 2 pizzas, cut into 12 nice sized slices. This tastes just like my local pizzaria's White Pizza...but I know it's healthier, because I was able to control the ingredients! By any means, take or add to this recipe as you wish, or as your diet permits! This is LOW in calories, and has REALLY GOOD FATS in it (olive oil is very good for you).

Recipe Ingredients for White Pizza

4 1/2 cups all purpose flour
2 1/4 teaspoons instant yeast
1 1/2 teaspoons salt
2 tablespoons olive oil
1 3/4 cups water
1 cup ricotta cheese
2 tablespoon olive oil
16 ounces mozzarella, high moisture
1 package frozen spinach, thawed
8 garlic cloves
2 tablespoon olive oil

Recipe Directions for White Pizza

  1. Crust:

  2. Whisk together 4 c. FLOUR (reserve 1/2 cup for kneading), YEAST, SALT.

  3. Stir in 2 tbsp OLIVE OIL and WATER until dough forms sticky ball.

  4. Knead dough using reserved flour, adding a little at a time, until it isn't sticky anymore and makes a smooth dough ball.

  5. Lightly oil a bowl and place dough ball inside. Cover with plastic wrap.

  6. Let rise in warm area for about 2 hours (or prepare ahead of time by refrigerating it for up to 16 hours, and take out of fridge to let rise for 30 min before adding toppings).

  7. Toppings:

  8. Punch risen dough. Knead with flour on flat surface.

  9. Divide dough into 2 balls.

  10. Stretch balls of dough out on floured pieces of parchment paper, to 18" diameter.

  11. Mix 2 tbsp OLIVE OIL with RICOTTA.

  12. Spread RICOTTA MIXTURE over pizzas.

  13. Spread thawed SPINACH over pizzas.

  14. Cut MOZZARELLA into 1/2" cubes. Spread evenly over pizzas.

  15. Coarsly chop garlic and spread evenly over pizzas.

  16. Drizzle 1 tablespoon olive oil over each pizza.

  17. Bake:

  18. Slide prepared pizzas--and the parchment paper underneath--on pizza stone (needed to crust up the bottom of the pizza...very important, since it's thin-crust! I suppose you could also preheat a cookie sheat to 500 degrees).

  19. Bake in a PREHEATED OVEN AT 500 degrees (important for making crust crispy).

  20. Takes 15 min, give or take a couple min. depending on your oven.

  21. Enjoy!
