This is a blended cold soup. Great as a side or served as a light meal.

Recipe Ingredients for White Gespaucho

3 cucumbers, chunked
1 cup scallions, sliced
3 tomatoes, chunked
2 cloves garlic, chopped fine
22 oz fat free chicken broth
3 cups light sour cream
1/2 slivered almonds

Recipe Directions for White Gespaucho

Chunk the cucumbers and place in the blender with a small amount of chicken broth. Blend into a little smaller chunks. Finely chop the garlic and add to the blender with the remaining chicken broth. Add the sour cream and blend. Stir in the scallions and chunked tomatoes and blend very slightly. Chill for at least one hour and serve with the slivered almonds.
