From Gusta, my wife's grandmother. Simple and tasty fruitcake that goes great with coffee or tea in the afternoon. Cut small pieces, 'cause this is rich stuff!

Recipe Ingredients for White Fruitcake

2 c sugar
1 1/2 c butter
6 eggs
2 t vanilla
1/2 c whiskey
4 c flour
1 t baking powder
1 lb pecans, chopped
1 lb candied cherries
1 lb candied pineapple

Recipe Directions for White Fruitcake

  1. Cream sugar and butter. Add eggs one at a time.

  2. In a separate bowl, sift together dry ingredients. Fold in the sugar/butter mix. Add liquid, fruits and nuts.

  3. Bake in a well-greased tube (bundt) pan, 2 hours in a slow oven, 275deg. I put a small pan of water beside the cake pan for moisture.

  4. (Gusta steamed hers about 2 hours and put in oven to dry & brown. You may add more whiskey (we use bourbon) after it has baked -- heat & spoon over the top.)

  5. Store the cake in bourbon-soaked cheesecloth to maintain moisture and that "special taste." Cover cheesecloth with foil to seal out air.
