A Christmassy, spicy white cake - makes two layers. I haven't tried this yet, but it's definitely on my Christmas list. Best filled with Italian butter cream.

Recipe Ingredients for White Eggnog Cake

2 1/2 cups flour
1 cup brown sugar
1/4 cup sugar
1/2 tsp. cream of tartar
1/2 cup butter, softened
4 egg whites, room temperature
1 tsp salt
1 1/2 tablespoon baking powder
1 cup eggnog
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. allspice

Recipe Directions for White Eggnog Cake

  1. Grease and flour two 8" or 9" cake pans (or one 13"x9"), and preheat oven to 350 degrees.

  2. Whip egg whites to the soft peak stage.

  3. Add in 1/4 cup sugar and cream of tartar, whip further to barely hard peak stage. (~2 minutes)

  4. In a separate bowl, beat together brown sugar and butter until smooth and creamy.

  5. Stir in eggnog until combined.

  6. In another separate bowl, combine flour, salt, baking powder and spices.

  7. While beating eggnog, butter and sugar mixture, gradually add in dry ingredients and beat until smooth.

  8. Fold in egg white mixture until combined. Do not beat!

  9. Bake for 45-60 minutes or until toothpick inserted comes out without batter (crumbs are okay.)
