The original recipe called for shortening and an extra 1/3 cup sugar. I found it too sweet. I added in addition to the vanilla 1/2 tsp almond extract. It was so yummy!

Recipe Ingredients for White Cupcakes

2 1/4 cup flour
1 cup sugar
3 tsp baking powder
1/2 tsp salt
1/2 cup Light Spread
1 cup lowfat milk
1 tsp vanilla
2 eggs

Recipe Directions for White Cupcakes

  1. Preheat oven to 350 degrees. Line cupcake pan with paper liners.

  2. Sift together dry ingredients except sugar in medium bowl.

  3. In a large bowl, cream together butter or shortening. Mix in one egg at a time. Mix in vanilla. Slowly mix in milk until well blended.

  4. Scape down sides of bowl. Add flour mixture in thirds until just blended.

  5. Scoop into prepared cupcake pan. Fill 1/2 to 2/3 full. Bake 20 to 25 minutes.
