Makes 4 servings



White crab cakes made from scratch. Makes 9 small cakes ideal as a starter or as lunch. Tastes good with sweet chilli sauce and salad.

Recipe Ingredients for White crab cakes

75 g bread
140 g white crab meat
4 spring onions
75 g french beans
1 hot red chili pepper
1 tsp ginger
2 tbsp lemon juice
1 garlic clove

Recipe Directions for White crab cakes

  1. Finely chop all the ingredients.

  2. Boil the beans for 1 or 2 minutes so that they are partly cooked.

  3. Drain the beans.

  4. Add the bread to the blender and blitz.

  5. Add all of the ingredients to the blender and mix well, but not so that the appearance is affected.

  6. Remove from the blender and divide the mixture into 8 or 9 portions. Form each portion into balls and wrap in clingfilm or put on a plate.

  7. Squash the portions a little into cakes and leave them in the fridge for an hour or longer to firm them up.

  8. Fry the cakes in a little oil just before they are eaten. This does not take very long at all.
