A no-bake pie that is simple but packs tons of flavor and texture. A true Christmas favorite!

Recipe Ingredients for White Christmas Pie

1 envelope gelatin, Knox, unflavored
1/4 cup water, cold
1/2 cup Splenda, granulated
4 tbsp flour
1 1/2 cup milk, skim
3/4 tsp vanilla extract
1/4 tsp almond extract
1/2 cup half and half, fat free
3 egg whites, beaten to a froth**
1/4 tsp cream of tartar
1/2 cup Splenda, granulated
1 cup coconut, moist shredded
1 pastry shell, baked*
1/4 cup maraschino cherries, whole

Recipe Directions for White Christmas Pie

  1. Soften gelatin in the cold water. Set aside.

  2. Mix together in a saucepan 1/2 cup Splenda granulated and flour. Stir in gradually the milk.

  3. Cook over low heat, stirring until it boils. Boil for 1 minute. Remove from heat. Stir in softened gelatin.

  4. Cool. When partially set, beat with a rotary beater until very smooth.

  5. Blend in the vanilla and almond extracts.

  6. Whip the half and half until stiff peaks form. Gently fold it into the cooked mixture.

  7. Make a meringue of the egg whites, cream of tartar and 1/2 cup Splenda granulated.

  8. Carefully fold in the meringue mixture.

  9. Fold in the coconut. Pile filling into a cooled baked pie shell.

  10. Sprinkle top with additional moist shredded coconut to cover.

  11. Decorate with well drained maraschino cherries.

  12. Chill until set, about 2 hours. Serve cold and keep in the refrigerator.

  13. *To avoid the extra calories, fat, etc., I have used individual small custard cups instead of using a pie shell.

  14. **I use Wilton brand egg white powder for the meringue which eliminates the possibility of salmonella from eating raw eggs. There is some sugar already in mix, but it's nominal.
