Whoa. Dangerously good!! Can also use dried blueberries, toasted walnuts & vanilla & 1/2 t lemon extract with dark chocolate chips instead of white choc, almonds & almond & orange extract. Orange or lemon zest can also be used.

Recipe Ingredients for White Chocolate Cranberry Muffins

1 1/2 c whole wheat pastry flour
1 c unbleached flour
1 1/2 t baking powder
1/2 t baking soda
1/4 t salt
1 t orange extract
2 t almond extract
2 large eggs
1 c low fat buttermilk
3/4 c Sucanat or brown sugar
4 T butter, melted
1 c dried cranberries
73 g (2/3 c) almonds, toasted and chopped
1 1/2 c white chocolate chips

Recipe Directions for White Chocolate Cranberry Muffins

  1. Preheat oven to 400 degrees. Coat muffin tin with cooking spray.

  2. Lightly spoon flours into measuring cup, tap once and level. Mix flours, baking powder and soda, & salt well in mixing bowl. Make well in center.

  3. Whisk eggs, melted & cooled butter, buttermilk, Sucanat, & extracts in another bowl. Mix the cranberries, chips & nuts into wet ingredients.

  4. Pour wet ingredients into well of flour mixture & fold wet into dry with spatula until just mixed.

  5. Using ice cream scoop or spoon, put batter into muffin tin, making 12 large muffins.

  6. Bake for 10 minutes at 400, turn pan halfway around, lower temp to 350 & bake 10 minutes more. Muffins are done when toothpick comes out clean. Cool in tin for 5-10 minutes & remove to cooling rack.
