White chocolate chips and craisins in an oatmeal muffin

Recipe Ingredients for White Chocolate Craisins Muffin

1 cup quick-cooking oats
1 cup skim milk
1/2 cup packed brown sugar
1 egg, beaten
1/4 cup applesauce
1/2 cup white chocolate chips
1/2 cup craisins
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Recipe Directions for White Chocolate Craisins Muffin

  1. Preheat oven to 400 degrees and line a muffin tin with 12 paper liners.

  2. Mix together oats, milk, and brown sugar and let stand for 15 minutes. Stir in egg, oil, and mix-ins (white chocolate chips and craisins).

  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Stir flour mixture into oat mixture until just moistened.

  4. Fill paper liners 3/4 full and bake 16 - 18 minutes. Transfer muffins to wire rack to cool.
