Recipe Ingredients for White Chocolate Chip Cookies

1 2/3 cups flour
1 1/4 tsp. baking soda
3/4 tsp. baking powder
1/4 tsp. salt
2 sticks unsalted butter, softened
3/4 cup sugar
2/3 cup brown sugar
1 large egg
1 1/2 tbs. milk
2 1/2 tsp. vanilla
1 1/3 cups oats
1 cup white chocolate chips
3 oz white chocolate, coarsely chopped
3/4 cup chopped pecans

Recipe Directions for White Chocolate Chip Cookies

  1. Position a rack in the upper third of the oven.

  2. Preheat the oven to 375 F and lightly grease the cookie sheets.

  3. Whisk together thoroughly: 1 2/3 cups all-purpose flour, 1 1/4 tsp. baking soda, 3/4 tsp. baking powder, 1/4 tsp. salt

  4. Beat on medium speed until creamy: 2 sticks (1/2lb) unsalted butter, softened

  5. Add and beat until well blended: 3/4 cup sugar, 2/3 cup brown sugar, 1 large egg, 1 1/2 Tbs. milk, 2 1/2 tsp. vanilla

  6. Add flour mixture to butter mixture. Blend until smooth.

  7. Finely grind in food processor or blender: 1 1/3 cups old fashioned rolled oats

  8. Stir oats into the dough along with: 1 cup white chocolate chips, one 3 oz. white chocolate bar, coarsely grated, 3/4 chopped pecans

  9. Chill dough for 45 min - 1 hour

  10. Shape the dough into 1 1/2 inch balls (I use a cookie scoop). Space the balls about 2 inches apart on baking sheet. You may pat down tops of balls just slightly if you like. Bake one sheet at a time, for about 8 -12 minutes or slightly brown, turning halfway through for even browning. Don't over bake; cookies should be soft in center.
