Recipe Ingredients for White Chili

1 tablespoon canola oil
1 1/2 cups chopped onion
8 ounce chopped green chiles
1 teaspoon dried oregano
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
30 ounces great northern beans, keep the water
1 1/2 lbs. carrots, diced

Recipe Directions for White Chili

  1. Heat oil in a large pot or Dutch oven over medium-high heat.

  2. Add onion; cook, stirring occasionally, until softened, about 5 minutes.

  3. Add carrots.

  4. Stir in chiles, oregano, cumin and cayenne.

  5. Cook, stirring occasionally, for 5 minutes.

  6. Stir in beans with the water from the cans; bring to a simmer.

  7. Cook, stirring occasionally, for 20 minutes.
