Makes 10 servings



Slow Cooker White Chili made with chicken breast and Great Northern beans. Spices can be adjusted according to taste. One serving is about 2 cups of cooked chili.

Recipe Ingredients for White Chili

1 1/2 lbs. chicken breast
10 cups chicken stock
11 cups Great Northern beans (6 cans)
4 tsp. cumin (more or less to taste)
1/2 tsp. red pepper flakes (more or less to taste)
1 tsp. oregano
4 oz. green chiles
1 onion, chopped
3 cloves garlic, chopped
2 tbs. olive oil
1 salt to taste

Recipe Directions for White Chili

  1. Saute onions and garlic in olive oil.

  2. Add all ingredients except beans to crock pot, including raw chicken.

  3. Cook on high for 5-6 hours.

  4. Remove chicken and dice or shred and return to crock pot.

  5. Turn crock pot to low.

  6. Rinse and drain beans. Puree 2 cups of beans. Add all approx. 1 hour before serving.

  7. Serve with shredded monterrey jack cheese, sour cream and extra green chiles, if desired.
