An easy alternative to traditional chili

Recipe Ingredients for White Chile

1 tbsp olive oil
1 large onion
2 cloves garlic
1 tsp dried oregano
1 tsp dried cumin
1 lb ground chicken or turkey
15 1/2 ounces chickpeas
1 cup frozen corn
1 1/2 cups chicken broth

Recipe Directions for White Chile

  1. Heat olive oil and add onions, corn, garlic, and spices. Cook until vegetables soften

  2. Add chicken and cook, breaking up with a fork, until no longer pink.

  3. Mash chickpeas with a potato masher.

  4. Add chickpeas and chicken broth to chicken mixture.

  5. Bring to a boil and simmer for 10-20 minutes.
