Recipe Ingredients for White Chile

2 tbsp canola oil
3 cups chopped onion
16 oz chopped green chiles
2 tsp dried oregano
2 tsp ground cumin
1/4 tsp cayenne pepper
15 oz great northern beans, rinsed
19 oz cannellini beans
30 oz wax beans
8 cups chicken broth
8 cups skinless chicken thighs, cooked, diced
4 tbsp lime juice

Recipe Directions for White Chile

  1. sautee onions in oil until tender. Add in chiles and spices. Cook, stirring occasionally for 5 min.

  2. stir in beans and broth, bring to a simmer. Cook, stirring occasionally for 20 min.

  3. Add chicken and lime juice. cook for 5 min more. Serve.
