SO good! Amazingly, if I made these vegetarian with veggies, brown rice, and beans these would be almost 700 calories EACH!

Recipe Ingredients for White Chicken Enchiladas

7 serving Flour Carb Balance Soft Taco Size Tortillas
2 c. cooked chicken, shredded
2 c. Colby Jack cheese, shredded
3 T. butter
3 T. flour
2 c. low sodium chicken broth
1 c. fat free sour cream
7 oz. canned green chilies

Recipe Directions for White Chicken Enchiladas

  1. Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick.

  2. Mix chicken and 1c. cheese. Roll up inside tortillas and place in pan.

  3. In a sauce pan, melt butter over medium heat; stir in flour and cook for 1 minute. Stir in broth and whisk until smooth. Continue to heat over medium heat until thickened and bubbly.

  4. Remove from heat and stir in chilies and sour cream. Do NOT boil!

  5. Pour over enchiladas in pan; sprinkle with remaining cheese.

  6. Bake in preheated oven for 22 min then under high broil for 3 minutes to brown cheese.
