White Chicken Chilli Recipe

Wonderful, simple, filling chilli that's perfect to use leftover chicken (or turkey) meat, or you can just poach a couple chicken breasts prior to cooking. I've let it simmer all day, though you really only have to cook till the cheese has melted. (Cut up cheese to make it easier to melt.) Tastes really good the next day as the flavors blend! Serve with corn bread or warmed corn tortillas and avocado.

Recipe Ingredients for White Chicken Chilli

3 cups chicken breast, cooked and shredded
8 oz monterey Jack Pepper cheese
6 cups Fat Free Vegetable Broth
4 cups Great Northern beans, rinsed and drained
16 oz salsa

Recipe Directions for White Chicken Chilli

  1. Combine all ingredients in a large pot.

  2. Bring to a boil and simmer until cheese is melted.
