Received rave reviews on another Web site. Some used chicken breast chunks, raw or cooked, either of which would be healthier. Caution with raw chunks: I would recommend simmering for 20 minutes, which I believe is the time recommended for stewing chicken, and adding the zucchini for the last 10 minutes. I increased the number of servings for a more manageable 9-10 ounces per serving. ground chicken, onion, garlic, chicken broth, oregano leaves, cumin, cayenne, zucchini, canned cannellini or great northern beans, canned chopped green chili, shredded reduced-fat Monterey Jack cheese cvt

Recipe Ingredients for White Chicken Chili

1 lb ground chicken (5332) or 10.8 ounces raw chunks or 2 cups cooked meat
1/2 cup chopped onion
2 teaspoons finely chopped garlic
3 cups reduced-sodium chicken broth (144288)
1 1/2 teaspoons dried oregano leaves
1 teaspoon ground cumin
1/8 (to 1/4) teaspoon cayenne
2 medium zucchini, chopped (about 3 cups)
30 oz cannellini (69896)or great northern beans, drained, rinsed
4 1/2 oz canned chopped green chiles (109422)
2 oz (1/2 cup) shredded reduced-fat Monterey Jack cheese (133525)

Recipe Directions for White Chicken Chili

  1. In 4- or 5-quart saucepan or Dutch oven, cook ground chicken, onion and garlic over medium heat 5 to 7 minutes, stirring constantly, until chicken is no longer pink.

  2. Stir in all remaining ingredients except cheese. Heat to boiling. Reduce heat; cover and simmer 10 minutes, stirring occasionally, until zucchini is tender.

  3. Remove from heat; stir in cheese until melted.
