Thick yummy white chili. Original recipe calls for chicken but I substituted ground turkey.

Recipe Ingredients for White Chicken Chili

3 tbsp olive oil
2 onions, chopped
4 cloves garlic, minced
1 tsp ground cumin
1 1/2 tsp dried oregano
1 tbsp jalapeno peppers, chopped
1/2 tsp cayenne pepper
8 cups fat free chicken broth
24 oz lean ground turkey
1 lb white beans, rinsed and soaked overnight
1 cup salsa

Recipe Directions for White Chicken Chili

  1. Saute the onions, garlic, spices and jalapeno peppers in olive oil for 5 minutes.

  2. Add beans and broth and bring to a boil.

  3. Reduce heat and simmer covered for about 2 hours or until beans are tender.

  4. Brown the turkey meat in a pan.

  5. Add turkey and salsa to soup and allow to heat through.

  6. Serve with light sour cream and reduced fat cheese.
