If you are crunched for time, instead of using the crockpot use a large pot and instead of uncooked rice use cooked rice and reduce broth to the consistancy of a very thick chili. Heat till hot.

Recipe Ingredients for White Chicken Chili

1 tbsp unsalted butter
2 tbsp garlic,chopped
1 medium white onion, chopped
1 tbsp olive oil
12 oz tomatillos, chopped
1/2 cup white rice, uncooked
15 oz beans,canned great northern white
4 oz jalapenos, chopped
7 oz green chili, chopped
1 tsp coriander, ground
1/2 tsp white pepper
2 tbsp cumin
1 dash louisiana hot sauce
3 cups chicken broth
1 1/2 lb chicken , cooked chopped
1/4 lb pork sausage
2 cups corn, frozen

Recipe Directions for White Chicken Chili

  1. Cook pork till browned, put in crockpot.

  2. Add butter and olive oil to the pan over medium heat. Saute onion and garlic till onion slightly carmelized.

  3. Add finished onion and garlic to crockpot and add all remaining ingredients except the corn. Stir to combine set on low for 8 hours or till rice is finished then add corn till it is heated thru.
