Recipe Ingredients for White Chicken Chili

1 tbsp olive oil
2 cups cooked chicken breast
1 large onion, chopped
2 garlic cloves, minced
32 oz chicken broth
15 1/2 oz cannellini beans, rinsed and drained
1 tsp dry mustard
1 tsp cumin
1 tsp chili powder
1/2 tsp salt
1/4 black pepper
4 oz baked tortilla chips
2 oz extra-sharp low-fat cheddar cheese

Recipe Directions for White Chicken Chili

  1. Warm oil in large skillet over medium high heat

  2. Add onion and garlic. Cook 5 minutes until tender.

  3. Spoon into slow cooker and add chicken, broth, beans mustard, cumin, chili powder, salt & pepper.

  4. Cover and cook on high 3-4 hours (or low for 5-6 hours).

  5. Sprinkle with cheese and tortilla chips.
