A family favorite in our house during the winter season. This is a different take on traditional chili. Has a southwestern flair. It's easy to make and taste great.

Recipe Ingredients for White Chicken Chili ala Mary

3 oz Chili Kit
12 oz Chicken
7 oz Mild Diced Tomatoes and Green Chilies
15 oz Beans Black
15 oz White Kidney Cannellini Beans
0.13 cup Lime Juice
1 tbsp Canola Oil

Recipe Directions for White Chicken Chili ala Mary

  1. Place oil in bottom of slow cooker. Add chopped onions. Then place raw chicken on top of onions. Add 3 cups of water. Take seasonings out of Carroll Shelby White Chicken Chili kit and add everything but cayenne pepper. Mix well. Add rotel and mix again.

  2. I drain both cans of beans, then rinse them with water. Drain again. This will cut back some of the sodium. Add beans to the cooker and mix everything well. Cook in slow cooker for 4 hours. During the cooking process I will check the chicken and shred in the cooker. Gives chili a great texture.
