Recipe Ingredients for White Beans and Greens

215 grams collard greens
3 large onion, chopped
1 tbsp garlic powder
1 tsp red pepper flakes
1 tbsp soy sauce
2 tbsp balsamic vinegar
2 cups Great Northern beans
28 oz diced tomatoes
1 tbsp Basil, Dried
2 tsp black pepper
100 grams spring mix

Recipe Directions for White Beans and Greens

  1. Remove the stems from the collardchard/kale just where the leaf meets the stem. Slice the leaves into 1/2-inch slices and discard the stems.

  2. Heat a large, non-stick skillet over medium high heat. Add the chard/kale and the onion and cook, stirring regularly, until the onion begins to turn golden.

  3. Add water or a tablespoon of soy sauce to prevent sticking, if necessary.

  4. Add the garlic and red pepper and cook for another minute.

  5. Add the beans, tomatoes, basil, vinegar and bring to a simmer. Reduce heat to medium, and cover tightly.

  6. Cook, stirring occasionally, until chard/kale is tender (allow 5-12 minutes, depending on your taste).

  7. Serve with vinegar, salt and pepper to taste
