beans, wheat berries, veg and a light vinaigrette

Recipe Ingredients for White bean-wheat berry salad

1 c wheat berries
1 1/2 c white beans
1 c spinach, raw
4 green onions
1/2 c tomato, chopped
1 c cucumber, chopped
20 baby carrots
1 T mustard
1 tsp honey
1 T extra virgin olive oil
1/8 tsp salt
1/4 tsp pepper
1 T lime juice
1 T lemon juice

Recipe Directions for White bean-wheat berry salad

  1. cook the beans and wheat berries separately

  2. chop the veggies

  3. mix the vinaigrette together and stir together all veg, beans, and wheat berries.

  4. serve at room temp or chilled.

  5. **the vinaigrette can be changed to suit your taste preference. I have also made this without the honey, and have tried stevia instead--both turn out just fine. Also, this can be made with a different grain and canned beans; however, dry beans allow you to control the salt content.
