Alter the herbs and/or spices to suit your own tastes. The potato may be omitted if you think there's too much starch, but the flavors blend really well, and it helps stretch the dish if you're counting pennies as well as calories. The same goes for the other vegetables--you can add more if you wish. Some people like to puree bean soup. You can if you want. I prefer not to.

Recipe Ingredients for White Bean Vegetable Soup

1 1/2 cups dry navy beans
2 cloves garlic
1 tbsp fresh rosemary
1 tbsp fresh thyme
1/4 tsp dried sage
1/8 tsp allspice
1 medium onion
2 medium carrots
2 stalks celery
1 medium potato (preferably gold)
1 medium red bell pepper (optional)
1/4 cup chopped parsley

Recipe Directions for White Bean Vegetable Soup

  1. Soak the beans overnight then drain and rinse. Add fresh water (or vegetable stock), until it reaches approximately two inches over the "bean line." Add the garlic, all the herbs except the parsley, and the spice(s).

  2. Simmer beans over low heat until almost done. Add the vegetables. Pour in boiling water or stock if necessary. Check seasonings and add more herbs if needed. Add salt and pepper to taste and continue cooking until the vegetables and beans are done.

  3. Stir in the parsley.
