A tweaked version of the white bean and tuna salad. I used EVVO (A little healthier) in it and did without the lemon zest plus used a little less pepper. Very high in protein and very high in iron.

Recipe Ingredients for White Bean & Tuna Salad

6 oz canned tuna, in water
1 cup cooked white beans
1/2 cup green pepper
3/10 yellow pepper
2 tbs. green onion
2 tbs. parsley
1 dash white pepper
1 tbs lemon juice
1 tsp extra virgin olive oil

Recipe Directions for White Bean & Tuna Salad

  1. Place all ingredients in a bowl and mix thoroughly.

  2. Dizzle lightly with extra virgin olive oil.
