Weight Watchers receipe. "The classic Tuscan combination of cannellini beans, tuna, lemon and parsley makes a really wonderful pasta salad. Add lemon zest to suit your taste." Yields about 1 1/2 cups per serving

Recipe Ingredients for White Bean & Tuna Pasta Salad

4 oz whole wheat pasta
1/3 cup fat-free chicken broth
1/4 cup red wine vinegar
1 1/2 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1 cup cannellini beans
6 1/2 oz roasted red peppers
1/2 cup red onion
1/3 cup parsley
6 oz albacore tuna
4 tsp capers
1 tbsp lemon zest

Recipe Directions for White Bean & Tuna Pasta Salad

  1. Cook pasta, drain & rinse

  2. In a large bowl, stir together broth, vinegar, oil, salt and pepper until blended.

  3. Add cooked pasta, beans, roasted peppers, onion and parsley

  4. Toss to mix and coat

  5. Break tuna into bite size pieces and add to bowl

  6. Toss gently to mix

  7. Add capers and zest and gently mix
