you can skip the truffle oil if you can't find it, but it adds something unique

Recipe Ingredients for White Bean Soup

1 t olive oil
1 medium onion
4 cloves garlic
1/2 t rosemary
2 c vegetable broth
3 c cannellini beans
2 T lemon juice
1 t truffle oil

Recipe Directions for White Bean Soup

  1. Heat olive oil in a large saucepan over medium-high heat. Add onion; sauté 2 minutes.

  2. Stir in garlic and pepper; sauté 2 minutes or until onion is tender.

  3. Add rosemary; sauté 30 seconds.

  4. Stir in broth and drained, rinsed beans. Bring to a boil; cover, reduce heat, and simmer 15 minutes.

  5. Remove from heat; stir in lemon juice. Let stand 5 minutes.

  6. Pour half of mixture into a blender; process until smooth. Or use a stick blender in the pot.

  7. Spoon 1 cup soup into bowls, and drizzle each serving with truffle oil.
