Great low - cal Great Northern Bean Recipe

Recipe Ingredients for White Bean Soup

1 lb Great Northern Beans
4 cups Fat-free chicken broth
4 cup water
1 large red bell pepper
2 cup,+diced celery ribs
3 medium carrots
1 medium onion
2 garlic cloves
1/4 cup parsley
1 tsp salt
1/2 tsp dried thyme
1/2 tsp black pepper
28 oz. Can diced tomatoes

Recipe Directions for White Bean Soup

  1. Place beans in a soup kettle; add enough water to cover beans by 2-in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour.

  2. Drain and rinse beans, discarding liquid. Add the broth, water, beans, carrots, red peppers, celery, parsley, salt, thyme, pepper and tomatoes. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until beans are tender.
