Simple, quick, delicious white bean soup.

Recipe Ingredients for White Bean Soup

5 tbs olive oil
1 medium onion, finely chopped
1 large carrot, finely chopped
2 stalks celery, finely chopped
3 medium tomatoes, peeled and chopped
2 cloves garlic
3 cups water
2 tsp thyme
2 cups cannellini beans
1 salt and pepper to taste

Recipe Directions for White Bean Soup

  1. Heat olive oil and cook onions until soft.

  2. Puree 3/4 of the beans and set aside.

  3. Add carrots and celery to the oil, cook another 5 minutes

  4. Add tomatoes, garlic, and thyme and cook another 6-8 minutes.

  5. Add water and beans, cook another 15-20 minutes.

  6. Add pasta if desired.
