Simple, lightly flavored, blended soup

Recipe Ingredients for White Bean Soup

1 onion, peeled and chopped
2 leeks, sliced
2 cloves garlic, peeled and chopped
1 tsp olive oil
500 ml water
1/2 cup parsley
1 tbl coriander
2 tsp black pepper
450 g great northern beans, drained

Recipe Directions for White Bean Soup

  1. Place the onion, leeks, garlic, oil and a little water in a medium sized pan. Cook over a moderate heat for 5 minutes until the vegetables are slightly softened.

  2. Bring the water to a boil and pour over the vegetables. Add the bay leaves and parsley. Season with coriander.

  3. Return the soup to a boil and simmer for 15 minutes.

  4. Add the beans for 3-4 minutes on a very low heat until they are warmed through

  5. Remove the pan from the heat and allow to cool slightly. Remove the bay leaf then blend with a stick blender or in a food processor.
