Recipe Ingredients for White Bean & Sausage Stew

2 cups dried white beans
2 tablespoons olive oil
1 yellow onion
2 cloves garlic
1 cup chicken stock
3 cups water
1 cup diced tomatoes
1/2 lb cooked sausage
3 tablespoons balsamic vinegar
1/4 cup grated parmesan cheese
1/4 cup toasted bread crumbs
1 tablespoon parsley

Recipe Directions for White Bean & Sausage Stew

  1. Follow instructions on the package to soak the white beans. Quick soak takes 1 hr. Cold soak takes 4 hours.

  2. In a dutch oven over medium heat, heat the olive oil. Add the onion, fine chopped, and saute until softened, 5 minutes. Add the garlic, minced, and saute 1 minute longer. Add the stock, water, tomoatoes and drained beans. (add a cup of dry white wine, if desired). Bring to a simmer and cook until the beans are tender and beginning to fall apart, about 1 1/2 hours. Mash some of the beans with the back of a spoon to create a creamy consistency. Add the sausage, thick slices, and cook until slightly thickened, 5 minutes. Add the balsamic vinegar and salt/pepper to taste. Cook for another 3 minutes to mellow the vinegar flavor.

  3. Preheat the broiler. Transfer the stew to flamebroof bowls for serving. In a small bowl, combine the parmesan, bread crumbs and parley, chopped. Sprinkle over the stew. Slip the bowls into the broiler and bake until bread crumbs/cheese mixture is browned, 3 to 4 minutes. Serve immediately.
