Recipe Ingredients for White Bean, Sausage and Kale Stew

1 tbsp Extra Virgin Olive Oil
1 lb beef sausage, precooked (like kielbasa) halved lengthwise and cut into 1/4 inch pieces
45 oz (3 cans) cannellini beans, drained & rinsed
2 cloves garlic, chopped
2 cups chicken broth
1 leaf, bay
4 cups kale, strip from stems and coarsely chop (1 bunch equals about 4 packed cups)
1/2 tsp salt
1/2 tsp black pepper, ground
1/2 cup Parmesan cheese, freshly grated

Recipe Directions for White Bean, Sausage and Kale Stew

  1. Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the sausage and cook, stirring occasionally, until browned, about 6 minutes.

  2. Add the beans and garlic and cook, stirring occasionally, for 3 minutes. Add the chicken broth, bay lear and kale and bring to a boil, then reduce the heat to medium-low and cook, covered, for 10 minutes.

  3. Discard the bay leaf. Season to taste with salt & pepper and serve with the cheese.
