Recipe Ingredients for White Bean Salad

1 red bell pepper
15 ounce cannellini beans (stewed preferred), drained
2 heads of Endive (large Belgin heads preferred, red or green or a combination), trimmed and thinly sliced
2 tablespoons lemon juice (fresh squeezed) (Yeild from about 1 large lemon)
2 teaspoons lemon zest (Yeild from about 1 large lemon)
2 tablespoons olive oil (garlic infused)
1/4 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper

Recipe Directions for White Bean Salad

  1. Roast the bell pepper until charred (either over a gas flame, grill or broiler). Peel, stem, seed and chop into a bean-size dice.

  2. Put the beans, red peppers, and endive into a serving bowl. Add the lemon zest and juice and drizzle with the garlic oil. Season with salt and pepper, to taste, and toss the ingredients until well-combined and coated in dressing.
