Roasted peppers adds a beautiful taste to beans for a fresh tasting soup.

Recipe Ingredients for White bean and roasted pepper soup

1 cup dry cannellini beans
12 oz diced tomatoes
4 red peppers
1 tsp salt
1 tsp pepper
1 tsp cumin
2 tsp parsley

Recipe Directions for White bean and roasted pepper soup

  1. Soak 1 cup beans overnight then simmer until tender

  2. roast bell peppers in oven until skin begins to blister.

  3. place peppers in a plastic bag to sweat and cool.

  4. skin, seed and dice peppers

  5. When beans are tender remove 1/2 of the beans and mash

  6. Place back in soup and add diced tomatoes, bell peppers, salt, pepper and cumin to the soup.

  7. Simmer for 15 min

  8. Garnish with fresh chopped parsley and serve
