This recipe was designed for anyone whose ever gotten just the teensiest bit sick of quinoa and black bean salads.

Recipe Ingredients for White Bean and Quinoa Chili-Cilantro Salad

1 1/2 cups cooked quinoa
1 cup baby spinach
19 oz Cannellini Beans
1 red pepper, diced
1 red onion, diced
1 cup cilantro, finely chopped
2 1/2 tbsp chili powder
1 tbsp coriander
1/4 cup lime juice
1/4 cup olive oil
1/4 cup water
1 tbsp agave syrup
2 tbsp red wine vinegar
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for White Bean and Quinoa Chili-Cilantro Salad

Toss everything (but the baby spinach) in a bowl and let sit in the fridge for approximately and hour. Mix in spinach before serving.
